Belongs to the class of fat hydrolyzing enzymes, alongside proteases and amylases as the three major hydrolytic enzymes. Optimal temperature: 35–37°C. Enzyme reaction: Triglyceride + H₂O = Diglyceride + Fatty acid anion. Most easily hydrolyzes primary ester groups. Monoglycerides are poor substrates. Two nearly identical isozyme lipases: A and B. Isoelectric points (pI): A is 4.9, B is 5.0. Extinction coefficient (E1%280): 13.3. Activator: Calcium (Ca²⁺).
Use: Biochemical research. An enzyme that catalyzes the hydrolysis of fats. Industrially used for fat hydrolysis to produce fatty acids, leather degreasing, detergent industry, etc.
